BBQ Beans
This is a fresh-tasting recipe for beans that go very well with bbq. They taste nothing like canned beans. The seasoning is influenced by Texas and California Santa Maria bbq styles.
Soak in water overnight (8” of water over beans):
- 2 cups/1 lb/.45 kg dried pinto beans
Cook in frying pan until crispy:
Sauté in the bacon fat:
- 1 medium onion
- 2 cloves garlic
Add to pan and cook 1 minute:
Add to pot, bring to boil and simmer until done:
- 2 ⅓ quarts/liters of home-made broth
- Drained pinto beans
- 2 bay leaves
- Salt
- Pepper
- Crispy bacon
- 1 medium tomato (2 cups, 1/2 L)
- 2 – 4 jalapenos
- 1 1/2 tablespoons oregano
- ¼ cup chopped fresh cilantro
Serve in small bowls with spoons
